Description A gutsy oil with the strength and generosity that echoes the goodness of the native soil, the sun and the great care that goes into its making. When the time is right, de Boerin’s olives are handpicked and cold-pressed, before being bottled, unfiltered, then labelled by hand on Kleinood Farm. The vintage, the date of bottling and the number of each individual bottle is handwritten on the back label. TASTING NOTES A highly aromatic oil with a generous nose of newly mown hay, green grass and tomato leaf. Ample and silky in the mouth, with initial notes of wild herbs and green tomato, followed by artichoke and a lingering whisper of walnut, typical of the Frantoio variety. A spicy aftertaste with undertones of cracked black pepper, fresh bell pepper and rocket show the nuanced characteristics of the Coratina variety. Since Extra Virgin Olive Oil is simply pressed fruit juice without additives, the factors influencing its quality and taste include the varieties of olives used, the terroir and production practices and, finally, the dedication of the producer. Extra Virgin is the highest quality olive oil classification. It must be produced entirely without the use of any solvents or under tem­peratures that will degrade the oil. It must be free from defects while exhibiting some fruitiness.  VARIETIES Italian: Frantoio / Coratina / Favolosa / Delicata TERROIR 1046 Trees / North-East Facing / Altitude 210m / Westleigh Soil Type / Mediterranean Climate HARVEST A tough season in the olive grove resulted in a small but intensely flavourful harvest. The olives were harvested by hand in small pockets, as different cultivars and individual trees ripened. The fruit was cold-pressed and left unfiltered. BOTTLING The pure extra virgin olive oil was bottled individually and by hand into our signature 500ml bottles. Each one was labelled by hand too, with the bottle number written on the back. PAIRING The unique intensity of this gutsy oil adds complexity and flavour to any dish. Use it in a summer salad or a fresh gazpacho. Over roast chicken, or roast lamb.
